I make the same salad but was looking for a better dressing. Made it exactly the way you said(minus the pecans cause I didn’t have any but will next time). Succulently delicious . Perfect the way it is

Yummy salad. Added some dried cranberries and kept the skin on the apples to up the vibrant mix of colors. Will certainly add this to my quick salad arsenal. Though next time around I will decrease the oil content to 3 tablespoons instead of 4 (1/4 cup).

I buy eggplants and then throw them awayI have good intentions when I buy them. Just need your help , I guess.
