Holy Avocados! It’s National Guacamole Day!

Please tell me you love guacamole- because today is National Guacamole Day! Who knew?

I have to confess, there was a time when I didn’t love the guac– does it take some getting used to? Is it an acquired taste?  Whatever.  I'm over it.  I adore it now, and that’s all that matters. I’ve mentioned many times that avocados are my go-to fruit (yup, little fun fact) when I don’t feel like cooking. They’re perfect with some toasted corn tortillas and a can of Mexican beans, and if I’m really lucky, I have some Mexican Pickled Vegetables or Pickled Hatch Chiles in the fridge to add on top. Perfect. Fast. Dinner.  

I personally am a purist, and I love my guac the traditional way – like they do it in Mexico. A little jalapeno, cilantro, onion, a squeeze of lime and a sprinkle of salt. Nothing more, nothing less. Well, maybe a Margarita... But there are lots of variations out there, and I’m in a sharing mood today! Enjoy!
